Raisin Saucepan Cake Recipe

1 cup raisins

2 cups water

1/2 cup margarine or butter, room temperature

1 3/4 cup all-purpose flour

1 cup granulated sugar

1 teaspoon each: baking soda, salt

1/2 teaspoon each: ground cinnamon, nutmeg

Powdered sugar, as garnish


Heat raisins and water to boiling in medium saucepan, reduce heat and simmer, uncovered, 10 minutes. Add margarine, stirring until melted, cool. Add combined remaining ingredients, except powdered sugar, mixing well. Pour batter into greased 13 x 9-inch baking pan.


Bake at 350 degrees until cake springs back when touched, about 35 minutes. Cool on wire rack, sprinkle with powdered sugar.
