Pears Belle Helene Recipe

2 cups unsweetened apple juice

1 3/4 teaspoons Equal sweetener

3 large pears, peeled, cored, cut into halves

3 cups sugar-free, fat-free ice cream

Bittersweet Chocolate Sauce

Mint sprigs, as garnish


Heat apple juice and Equal sweetener to simmering in large skillet, add pear halves, cut sides down. Simmer, covered, until pears are tender, 10 to 15 minutes. Remove pears with slotted spoon.


Flatten scoops of ice cream in 6 shallow dishes, place pears on top and drizzle with Bittersweet Chocolate Sauce. Garnish with mint.
