Peach Meringue Cake Recipe

Peach Meringue Cake Recipe

8 tablespoons margarine or butter, room temperature

1/2 cup sugar

4 egg yolks

1 teaspoon vanilla

1 cup all-purpose flour

2 teaspoons baking powder

1/4 teaspoon salt

1/3 cup fat-free milk

Peach Cream Filling

Meringue Layers


Beat margarine in sugar in large bowl until fluffy, beat in egg yolks and vanilla. Mix in combined flour, baking powder, and salt alternately with milk, beginning and ending with dry ingredients. Spread butter in 2 greased and floured 9-inch round cake pans.


Bake at 350 degrees until toothpick inserted in center comes out clean, 35 to 40 minutes. Cool cakes in pans on wire rack 10 minutes, remove from pans and cool. Place 1 cake layer on serving plate, spread with 1/2 cup Peach Cream Filling. Top with 1 Meringue Layer and spread with 1/2 cup Peach Cream Filling. Repeat layers, ending with a Meringue Layer.
