Orange Poppy Seed Cake Recipe

Orange Poppy Seed Cake Recipe

12 servings



1/2 cup sugar

6 tablespoons margarine or butter, room temperature

2 eggs

3/4 cup fat-free sour cream

2 tablespoons frozen orange juice concentrate, thawed

2 cups cake flour

2 tablespoons poppy seeds

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt


Citrus Glaze:

1 cup powdered sugar

3-4 tablespoons orange juice


Beat sugar and margarine in large bowl until fluffy. Beat in eggs, sour cream, and orange juice, add combined remaining ingredients, except Citrus Glaze, beating on medium-high speed 1 to 2 minutes. Pour into greased and floured 6-cup fluted cake pan.


Bake at 350 degrees until toothpick inserted in center of cake comes out clean, 40 to 50 minutes. Cool in pan on wire rack 25 to 30 minutes, invert onto wire rack and cool. Spoon Citrus Glaze over cake


The making of Citrus Glaze:

Mix sugar and enough orange juice to make glaze consistency.
