Mixed Berry Tart Recipe

Shortbread Pastry

Mock Mascarpone

3-4 cups mixed berries (raspberries, blackberries, strawberries, blueberries, gooseberries, currants, etc)

1/4 cup sugar-free currant or apple jelly, melted

Powdered sugar, as garnish


Roll pastry between 2 sheets of waxed paper into 12-inch circle. Ease into 10-inch tart pan and trim, pierce bottom with fork. Bake at 425 degrees until crisp and golden brown, 10 to 15 minutes. Cool on wire rack.


Spread Mock Mascarpone evenly on cooled pastry, top with berries and drizzle with jelly. Dust serving plates with powdered sugar, top with tart slices.
