Glazed Applesauce Raisin Cake Recipe

12 to 16 servings



1 cup unsweetened applesauce

2/3 cup canola oil

2 eggs

1 teaspoon maple or vanilla extract

3/4 cup raisins

1/2 cup coarsely chopped walnuts (optional)

2 cups all-purpose flour

7 1/4 teaspoon Equal

1 teaspoon baking soda

1 1/2 teaspoon ground cinnamon

1/4 teaspoon each: ground nutmeg, salt

Vanilla Cream Cheese Glaze


Mix applesauce, oil, eggs, maple extract, raisins, and walnuts in large bowl. Add combined flour, Equal, baking soda, spices, and salt, mixing until blended. Spoon batter into greased 13 x 9-inch baking pan.


Bake at 350 degrees until cake is browned and toothpick inserted in center comes out clean, 18 to 20 minutes. Cool on wire rack, Drizzle with Vanilla Cream Cheese Glaze.
