Coffee Frosted Cocoa Cake Recipe

Coffee Frosted Cocoa Cake Recipe

A perfect cake for potluck dinner and picnic.



1 1/2 cups sugar

1/2 cup margarine or butter, room temperature

2 eggs

1 teaspoon vanilla

2 cups all-purpose flour

3/4 cup unsweetened cocoa

2 teaspoons baking soda

1 teaspoon salt

1 cup fat-free milk


Coffee Frosting

1 tablespoon each, instant coffee granules,

hot water, margarine or butter, room temperature.

1 cup powdered sugar

2-3 tablespoons fat-free milk


Beat sugar and margarine in large bowl until fluffy. Beat in eggs one at a time, mix in vanilla. Mix in combined flour, cocoa, baking soda, and salt alternately with milk, beginning and ending with dry ingredients. Spread batter in greased and floured 13 x 9 inch cake pan.

Bake at 350o until toothpick inserted in center or cake comes out clean, 25 to 30 minutes. Cool in pan on wire rack. Frost with Coffee Frosting.


Coffee Frosting

Dissolve coffee in hot water in medium bowl. Beat in margarine, powdered sugar, and enough milk to make a spreadable consistency.
