Cinnamon Bread Pudding Recipe

8 servings



2 cups fat-free milk

4 tablespoons margarine or butter, cut into pieces

2 eggs

3 1/2 teaspoons Equal sweetener

1 1/2 teaspoons ground cinnamon

1/8 teaspoon ground cloves

3 dashes ground nutmeg

1/4 teaspoon salt

6 cups day-old French or Italian bread, cubed


Heat milk and margarine to simmering in medium saucepan, remove from heat and stir until margarine is melted. Cool 10 minutes. Beat eggs in large bowl until foamy, mix in Equal, spices and salt. Mix in milk mixture and bread.


Spoon mixture into ungreased 1 1/2 quart casserole. Place casserole in roasting pan on middle oven rack, pour 1 inch hot water into pan. Bake, uncovered, at 350 degrees until pudding is set and sharp knife inserted halfway between center and edge comes out clean, 40 to 45 minutes.
