Apple Cranberry Streusel Pie Recipe

Basic Pie Crust

1 tablespoon cornstarch

9 teaspoons Equal sweetener

1 cup apple cider or unsweetened apple juice

1 1/2 cups cranberries, coarsely chopped

3/4 teaspoon ground cinnamon

1/4 teaspoon each: ground nutmeg, salt

5 cups sliced, cored, peeled tart baking apples

Cinnamon Streusel


Make Basic Pie Crust, using a 9-inch pie pan.


Combine cornstarch and Equal sweetener in small saucepan, stir in apple cider and cranberries. Heat to boiling, reduce heat and simmer, stirring until thickened, about 1 minute. Stir in spices and salt. Toss cranberry mixture with apples, arrange in pastry and sprinkle evenly with Cinnamon Streusel. Bake at 400 degrees until pastry is golden and apples are tender, 50 to 60 minutes, covering pie loosely with aluminum foil during last 20 to 30 minutes of baking time if necessary to prevent excessive browning. Cool on wire rack, serve warm.
