Pumpkin Cinnamon Spice Muffins Recipe

18 muffins



1 1/2 cups all-purpose flour

1/2 cup whole wheat flour

3/4 cup packed light brown sugar

1 1/2 teaspoons each: baking powder

1/2 teaspoon each: baking soda, ground cinnamon, nutmeg, and all spice

1/8 teaspoon ground cloves

1 cup canned pumpkin

1 egg

1/4 cup canola oil

1/3 cup fat-free milk

1/3 cup frozen orange juice concentrate, thawed


Combine flours, baking powder, brown sugar, baking soda, and spices in large bowl, add combine remaining ingredients, mixing just until dry ingredients are moistened. Spoon into 18 greased muffin cups. Bake at 400 degrees until muffins are browned and toothpick inserted in centers comes out clean, 12 to 14 minutes.
