Spinach and Cheese in Mini-Quiches Recipe

1 1/2 dozen



1 1/4 cups fat-free cottage cheese

1/4 cup grated fat-free parmesan cheese

2 tablespoons each: fat-free milk, flour

1/2 cup finely chopped fresh spinach

1/2 teaspoon each: dried oregano and thyme leaves

Salt and white pepper, to taste

2 eggs

1 1/2 dozen frozen mini-fillo shells, thawed


Mix cheeses, milk, flour, spinach, and herbs: season to taste with salt and pepper. Stir in eggs. Spoon mixture into fillo shells on cookie sheet or in mini-muffin tins. Bake at 325 degrees until puffed and beginning to brown on the tops, about 20 minutes.
