Baked Spinach Balls Recipe

12 servings



2 cups herb-seasoned bread stuffing cubes

1/4 cup each: grated fat-free parmesan cheese, chopped green onions

2 cloves garlic, minced

1/8 teaspoon ground nutmeg

1 package frozen chopped spinach, thawed, well drained

1/4-1/3 cup reduced-sodium vegetable broth

2 tablespoons margarine or butter, melted

Salt and pepper, to taste

1 egg, lightly beaten


Combine stuffing cubes, parmesan cheese, onions, garlic, and nutmeg in medium bowl. Mix in spinach, broth, and margarine, season to taste with salt and pepper. Mix in egg. Shape mixture into 24 balls. Bake at 350 degrees on greased jelly roll pan until spinach balls are browned, about 15 minutes.
