Tempeh Fajitas Recipe

4 servings

 

Ingredients:

8-12 ounces tempeh, cut into strips

Fajita Marinade

1 each sliced medium red bell pepper, onion

1 can black beans, rinsed, drained

2 tablespoons finely chopped cilantro

1 teaspoon each: ground cumin, dried marjoram leaves

Salt and pepper, to taste

8 flour or corn tortillas, warm

1 cup hot or mild salsa

1/2 cup fat-free sour cream

 

Fajita Marinda:

1/2 cup lime juice

4 cloves garlic, minced

1 1/2 teaspoons dried oregano leaves

1/2 teaspoon ground allspice

1/4 teaspoon black pepper

Method:

Combine tempeh and Fajita Marinade in glass baking dish; refrigerate; covered, 1 to 2 hours, drain. Cook tempeh in lightly greased large skillet over medium heat until browned, 5 to 8 minutes, move tempeh to side of pan. Add bell pepper and onion, cook until tender, about 5 minutes. Add beans, cilantro, cumin, and marjoram, cook until hot, 2 to 3 minutes. Season to taste with salt and pepper, serve in tortillas with salsa and sour cream.

 

Fajita Marinade:

Mix all ingredients.
