Spinach Cheese Crepes Recipe

4 servings

 

Ingredients:

1/4 cup chopped onion

1 package frozen chopped spinach, thawed, well-drained

1 cup fat-free cottage cheese

1/2 teaspoon dried thyme leaves

2-3 pinches ground nutmeg

Salt and pepper, to taste

8 slices fat-free Mozzarella or Swiss cheese

8 Crepes

1 1/2 cup Fresh Tomato and Herb Sauce

Method:

Saute onion in lightly greased medium skillet until tender, 3 to 4 minutes. Add spinach and cook until very dry, about 5 minutes. Mix with cottage cheese, thyme, and nutmeg, season to taste with salt and pepper.

 

Place cheese slices on crepes, top with spinach-cheese mixture. Roll up crepes and place, seam sides down, in greased baking dish. Bake, loosely covered, at 325 degrees until hot, about 10 minutes. Serve with Fresh Tomato and Herb Sauce.
