Roasted Eggplant and Vegetarian Sausage with Ziti Recipe6 servings
Ingredients: 1 medium eggplant, unpeeled, sliced 3 medium onions, cut into wedges Vegetable cooking spray 1/2 teaspoon each: dried thyme, marjoram and savory leaves Salt and pepper, to taste 12 ounces Italian-style vegetarian sausage, cooked, crumbled 1 can reduced-sodium diced tomatoes, undrained 1 tablespoon roasted garlic 8 ounces ziti, cooked, warm |
Method: Cut eggplant slices into fourths, arrange eggplant and onions in single layer on foil-lined greased jelly roll pan. Spray vegetables with cooking spray, sprinkle with herbs, salt and pepper. Roast at 425 degrees 25 minutes. Spoon combined vegetarian sausage, tomatoes with liquid, and roasted garlic over vegetables, roast until eggplant and onions are tender, about 15 minutes. Serve over ziti. |
