Meatless Sloppy Joes Recipe4 servings
Ingredients: 3/4 cup sliced mushrooms 1/2 cup each: chopped onion, green or red bell pepper 1 teaspoon minced garlic 1/2 cup each: reduced-sodium catsup, textured vegetable protein 2/3 cup water 2 tablespoons light brown sugar 1 tablespoon prepared mustard 1 teaspoon each: celery seed, chili powder Salt and pepper, to taste 4 whole wheat hamburger buns, toasted 8 sweet or dill pickle spears |

Method: Saute mushrooms, onion, bell pepper, and garlic in lightly greased medium saucepan until tender, 5 to 8 minutes. Stir in remaining ingredients, except salt, pepper, buns, and pickles, heat to boiling. Reduce heat and simmer, covered, 10 minutes. Season to taste with salt and pepper. Serve in buns with pickles. |
