Falafel Dinner Loaf Recipe

1 package falafel mix

1/2 cup each: shredded zucchini, chopped mixed dried fruit

3 tablespoons each: coarsely chopped tasted pecans, thinly sliced green onion

2 eggs

3/4 cup plain fat-free yogurt


Prepare falafel mix with water according to package directions, mix in remaining ingredients, except yogurt. Pack mixture into greased 7 x 4-inch loaf pan. Bake, uncovered, at 350 degrees until set, about 30 minutes. Invert loaf onto serving plate, serve with yogurt.
