Black Bean and Smoked Tofu Salad Recipe4 servings
Ingredients: 2 cans black beans, rinsed, drained 2 packages smoked tofu, cubed 1 cup each: chopped tomato, red bell pepper 1/2 cup sliced red onion 1/4 cup each: finely chopped cilantro, parsley 2 teaspoons each: finely chopped jalapeno chili, roasted garlic
Mustard-Honey Dressing : 3-4 tablespoons each: olive oil, cider vinegar 1 tablespoon Dijon mustard 1-2 tablespoons honey 1/2 teaspoon dried oregano leaves 1-2 dashes red pepper sauce |

Method: Combine all ingredients.
Note: The smoky flavor of the tofu is a pleasant contrast to the picante chili, fresh cilantro, and Mustard-Honey Dressing. |
