Asian Fried Rice Recipe

4 servings



2 cups broccoli florets and sliced stalks

1 cup halved snow peas

3/4 cup each: bean sprouts, sliced carrots, shiitake mushrooms, chopped celery, green bell pepper

1 teaspoon each: minced garlic, gingerroot

1/2 cup reduced-sodium vegetable broth

2 tablespoons reduced-sodium soy sauce

1 1/2 cups each: cooked white and wild rice

1 egg, lightly scrambled, crumbled

Salt and pepper, to taste


Stir-fry vegetables, garlic, and gingerroot in lightly greased large wok or skillet until crisp-tender, 5 to 8 minutes. Add broth and soy sauce, stir in rice and scrambled egg and stir-fry 2 to 3 minutes longer. Season to taste with salt and pepper.
