Angel Hair Pasta with Vegetables and Goat Cheese Recipe

Ingredients:

8 ounces each: snow peas, sliced mushrooms

1 cup each: sliced carrots, tomatoes

1 teaspoon each: dried basil and tarragon leaves

1/2 cup each: reduced-sodium vegetable broth, fat-free milk

2 teaspoons tomato paste

Salt and pepper, to taste

3 ounces goat cheese or reduced-fat cream cheese

12 ounces capellini or thin spaghetti, cooked, warm

Method:

Saute vegetables and herbs in lightly greased large skillet until snow peas are crisp-tender, 6 to 8 minutes. Stir in vegetable broth, milk, and tomato paste, heat to boiling. Reduce heat and simmer, uncovered, until thickened to desired sauce consistency, about 10 minutes, stirring occasionally, season to taste with salt and pepper. Stir goat cheese into warm pasta until melted, add vegetable mixture and toss.
