White Gazpacho Recipe4 servings
Ingredients: 1 large onion, sliced 4 cloves garlic, minced 2 cups fat-free milk 1 vegetable or chicken bouillon cube 1-1 1/2 cups plain fat-free yogurt 2 teaspoons lemon juice 2 dashes hot pepper sauce Salt and white pepper, to taste 1/3 cup each: chopped seeded cucumber, yellow tomato, avocado Finely chopped cilantro, as garnish |

Method: Saute onion and garlic in lightly greased skillet over medium-low heat until very tender, about 15 minutes. Add milk and bouillon cube, cook over medium-high heat, stirring frequently until mixture is hot and bouillon cube is dissolved. Process soup, yogurt, lemon juice, and hot pepper sauce in food processor or blender until smooth. Season to taste with salt and white pepper. Serve chilled, stir cucumber, tomato and avocado into soup before serving and sprinkle with cilantro. |
