Sun-Dried Tomato and Linguine Soup Recipe4 servings
Ingredients: 1/2 cup thinly sliced celery 2 tablespoons thinly sliced green onions 2 cloves garlic, minced 2 cans reduced-sodium chicken broth 2 ounces uncooked linguine, broken into 2 to 3-inch pieces 2 sun-dried tomatoes (not in oil), softened, chopped 1-2 teaspoons lemon juice Salt and pepper, to taste |

Method: Sauté celery, onions and garlic in lightly greased medium saucepan until tender, 5 to 7 minutes. Stir in broth and heat to boiling, add linguine and sun-dried tomatoes. Reduce heat and simmer, uncovered, until pasta is al dente, about 10 minutes. Season with lemon juice, salt and pepper. |
