Split Pea Soup with Ham Recipe6 servings
Ingredients: 1 1/2 cups each: chopped onions, cubed lean smoked ham, fat trimmed 1 cup chopped carrots 1/2 cup sliced celery 1 tablespoon canola oil 6 cups water 1 can reduced-sodium fat-free chicken broth 1 pound dried split peas 1 teaspoon dried marjoram leaves Salt and pepper, to taste |

Method: Saute onions, ham, carrots, and celery in oil in large saucepan until tender, 8 to 10 minutes. Add water, chicken broth, split peas, and marjoram, heat to boiling. Reduce heat and simmer, covered, until peas are tender, 1 to 1 1/4 hours. Season to taste with salt and pepper. |
