Sesame Noodle Soup with Vegetables Recipe4 servings
Ingredients: 1/2 cup sliced green onions 4 cloves garlic, minced 1 tablespoon Asian sesame oil 2 cups thinly sliced napa cabbage 1 cup chopped red bell pepper 1/2 cup julienned carrots 3 cans reduced-sodium chicken broth 12 ounces boneless, skinless chicken breast, cooked, shredded 1 package fresh Chinese-style noodles Salt and pepper, to taste |

Method: Saute green onions and garlic in sesame oil in large saucepan until tender, about 5 minutes. Add cabbage, bell pepper, and carrots, saute until vegetables are tender, about 5 minutes. Add chicken broth and heat to boiling. Stir in chicken and noodles, reduce heat and simmer, uncovered, until noodles are just tender, 2 to 3 minutes. Season to taste with salt and pepper. |
