Ravioli Soup Recipe

Ingredients:

1/2 cup julienned carrot

1/4 cup sliced green onions

1 teaspoon margarine or butter

2 1/2 quarts fat-free chicken broth

3 cups thinly sliced bok choy or Napa cabbage

Chicken Ravioli

Salt and pepper, to taste

Method:

Saute carrot and green onions in margarine in large saucepan until tender, about 5 minutes. Add broth and heat to boiling, reduce heat and simmer, covered, 5 minutes. Stir in bok choy and Chicken Ravioli and heat to boiling, reduce heat and simmer, uncovered, 2 to 3 minutes or until ravioli are tender and rise to top of soup. Season to taste with salt and pepper.
