Poblano Chili Soup Recipe

Poblano Chili Soup Recipe

8 servings



2 medium onions, chopped

4 medium poblano chilies, seeded, chopped

1/2-1 small jalapeno chili, seeded, finely chopped

2 cans reduced-sodium fat-free chicken broth

3 cups tomato juice

1/2 teaspoon ground cumin

Salt and pepper, to taste

Chopped cilantro, as garnish


Saute onions and chilies in lightly greased skillet until onions are tender, about 5 minutes. Add broth, tomato juice, and cumin and heat to boiling, reduce heat and simmer, covered, until chilies are very tender, about 10 minutes. Process in food processor or blender until smooth, season to taste with salt and pepper. Serve warm or chilled, sprinkle each bowl of soup with cilantro.
