Onion and Leek Soup with Mushrooms Recipe6 first-course servings
Ingredients: 3 cups sliced onions 1 1/2 cups sliced leeks 1/2 cup chopped shallots or green onions 1 tablespoon margarine or butter 1 teaspoon sugar 4 ounces mushrooms, sliced 6 1/2 cups reduced-sodium chicken broth Salt and pepper, to taste |

Method: Cook onions, leeks, and shallots in margarine in large saucepan, covered, over medium heat until wilted, 5 to 8 minutes. Stir in sugar and mushrooms, cook, uncovered, over medium low heat until onion mixture is golden, 10 to 15 minutes. Add broth and heat to boiling, reduce heat and simmer, uncovered, 15 minutes. Season to taste with salt and pepper. |
