Gazpacho Recipe

Gazpacho Recipe

6 servings

 

Ingredients:

5 large tomatoes, halved, seeded

2 cups reduced-sodium tomato juice

2 cloves garlic

2 tablespoons lime juice

1 teaspoon dried oregano leaves

1 cup each: chopped yellow bell pepper, celery, cucumber

6 green onions, thinly sliced

2 tablespoons finely chopped cilantro

Salt and pepper, to taste

Avocado Sour Cream

Hot pepper sauce

Method:

Chop tomatoes, reserving 1 cup. Process remaining tomatoes, tomato juice, garlic, lime juice and oregano in food processor or blender until smooth. Mix tomato mixture, reserved tomatoes, bell pepper, celery, cucumber, green onion, and cilantro in large bowl, season to taste with salt and pepper. Serve chilled, top each bowl of soup with a dollop of Avocado Sour Cream. Serve hot with pepper sauce.
