Chilled Pea Soup Recipe

6 servings



1/2 cup chopped onion

1/2 teaspoon each: dried marjoram and thyme leaves

2 cups reduced-sodium fat-free chicken broth

2 packages frozen peas

2 cups sliced romaine lettuce

Salt and white pepper, to taste

1/2 cup fat-free sour cream

Paprika, as garnish


Saute onion and herbs in lightly greased large saucepan until onion is tender, about 5 minutes. Stir in broth, peas and lettuce, heat to boiling. Reduce heat and simmer, covered, until peas are tender, 5 to 8 minutes. Process soup in food processor or blender until smooth, season to taste with salt and pepper. Serve chilled, stir in sour cream before serving and sprinkle with paprika.
