Peperonata Recipe

8 servings



2 cups sliced onions

1 cup each: sliced green and red bell pepper

6 cloves garlic, minced

1/4 cup water

Salt and pepper, to taste


Saute vegetables in lightly greased medium skillet over medium heat 5 minutes, stirring occasionally. Add water and cook, covered, over medium-low heat until vegetables are very tender, 20 to 25 minutes, stirring occasionally. Season to taste with salt and pepper.
