Lemon-Spiked Garlic Greens Recipe

4 servings



1/4 cup each: finely chopped onion, red bell pepper

4 cloves garlic, minced

1 1/2 pounds greens, coarsely chopped

1/2 cup water

1-2 tablespoons lemon juice

Salt and pepper, to taste

1 hard-cooked egg, chopped


Saute onion, bell pepper, and garlic in lightly greased large saucepan until tender, 3 to 4 minutes. Add greens and water, heat to boiling. Reduce heat and simmer, covered, until greens are wilted, 4 to 5 minutes, drain. Season to taste with lemon juice, salt and pepper, sprinkle with egg.
