Green and Smashed Potatoes Recipe4 servings
Ingredients: 1/4 cup finely chopped onion 3 cloves garlic, minced 1 1/2 cups thinly sliced green (kale, mustard, or turnip greens) 1/4 cup water 3 medium Idaho potatoes, cubed, cooked 1/4 cup fat-free sour cream 2-4 tablespoons fat-free milk 1-2 tablespoons margarine or butter Salt and pepper, to taste |
Method: Saute onion and garlic in lightly greased medium skillet until tender, 3 to 4 minutes. Add greens and water, heat to boiling. Reduce heat and simmer, covered, until greens are tender about 5 minutes, cook, uncovered until water has evaporated and greens are almost dry.
Mash potatoes with potato masher or electric mixer, adding sour cream, milk, and margarine, stir into greens and cook over low heat until hot, about 5 minutes. Season to taste with salt and pepper. |
