Braised Kale Recipe

4 servings



1 medium leek, sliced

2-3 teaspoons olive oil

1 pound kale, torn into pieces

1/2 cup reduced-sodium chicken broth

1/2 cup fat-free sour cream

1 teaspoon Dijon mustard

1-2 tablespoons crumbled cooked bacon

Salt and pepper, to taste


Saute leek in oil in large saucepan until tender, 3 to 4 minutes. Add kale and chicken broth, heat to boiling. Reduce heat and simmer, covered, until kale is wilted, about 5 minutes, cook uncovered until greens are almost dry. Stir in sour cream, mustard, and bacon, cook over low heat 2 to 3 minutes. Season to taste with salt and pepper.
