Tortilla Wedges Recipe

Ingredients:

Chorizo

1/2 cup each: chopped green bell pepper, onion

4 large flour tortillas

1 cup each: shredded reduced-fat Monterrey Jack Cheese,

shredded fat-free Cheddar cheese

Red tomato salsa or prepared salsa

1/4 cup fat-free sour cream

Method:

Cook Chorizo, bell pepper, and onion in lightly greased medium skillet over medium heat until onion is tender and Chorizo is browned, crumbling with fork.

 

Place tortillas on baking sheets, sprinkle evenly with Monterrey Jack Cheese. Sprinkle with Chorizo mixture and top with Cheddar cheese. Bake at 450 degrees until edges of tortillas are browned and cheese is melted, 6 to 8 minutes. Top with red tomato salsa and sour cream. Cut each tortilla into 6 wedges.
