Herbed Veggie Burgers Recipe4 servings These fabulous meatless burgers can star in any meal.
Ingredients: 3/4 cup each: finely chopped broccoli florets, mushrooms 1/4 cup finely chopped onion 2 cloves garlic, minced 2 teaspoons each: dried bouquet garni 2/3 cup cooked wild or brown rice 1/3 cup each: quick cooking oats, coarsely chopped toasted walnuts 1/2 cup each: shredded fat-free Cheddar cheese Salt and pepper, to taste 1 egg 3 multigrain or whole wheat buns, toasted 1/3 cup fat-free mayonnaise Lettuce leaves |

Method: Sauté broccoli, mushrooms, onion, garlic, and bouquet garni in lightly greased medium skillet until tender, 8 to 10 minutes. Mix with rice, oats, walnuts and cheese, season to taste with salt and pepper. Mix in egg. Shape mixture into 4 burgers, cook in lightly greased skillet over medium low heat until browned, 3 to 4 minutes on each side. Serve in buns with mayonnaise and lettuce.
