Calzones Recipe

Ingredients:

1 cup each: chopped zucchini, sliced mushrooms

1/2 cup each: chopped onion, green bell pepper

1 can diced tomatoes with roasted garlic, undrained

2 teaspoons Italian seasoning

1 cup fat-free ricotta cheese

2 cups shredded reduced-fat mozzarella cheese

Salt and pepper, to taste

1 package hot roll mix

1 1/4 cups hot water

1 tablespoon olive oil

Fat-free milk

Method:

Saute zucchini, mushrooms, onion and bell pepper in lightly greased skillet 5 minutes. Add tomatoes with liquid and Italian seasoning, simmer until vegetables are tender and excess liquid is gone, about 10 minutes. Remove from heat, stir in cheeses and season to taste with salt and pepper.

 

Make hot roll mix according to package directions for pizza, using hot water and oil. Divide dough into 8 equal pieces, roll each on floured surface into a 7-inch circle. Spoon about 1/2 cup vegetable mixture on each: fold in half and flute edges or seal edges with tines of fork. Brush tops of pastries with fat-free milk. Bake on cookie sheet at 375 degrees until browned, about 15 minutes. Cut calzones into halves.
