Baked Sloppy Potatoes Recipe

Baked Sloppy Potatoes Recipe

4 servings

Serve with baked potatoes with this sweet-sour beef filling

 

Ingredients:

1 pound ground beef eye of round

1/2 cup each: chopped onion, celery, red or green bell pepper

2 cloves garlic, minced

1 cup reduced-sodium catsup

1/2 cup water

2 tablespoons prepared mustard

1 tablespoon cider vinegar

2 teaspoons packed light brown sugar

Salt and pepper, to taste

4 hamburger buns, toasted

Method:

Cook ground beef, onion, celery, bell pepper, and garlic in lightly greased medium skillet over medium heat until beef is browned and vegetables are tender, about 10 minutes. Stir in remaining ingredients, except salt, and pepper, heat to boiling. Reduce heat and simmer, uncovered, until mixture is thickened, about 5 minutes. Season to taste with salt and pepper. Spoon mixture into 4 large baked potatoes.
