Tossed Greens with Rice Noodles Recipe4 servings
Ingredients: 1/2 package rice noodles 4 cups medium or other mixed greens 1/4 cup each: chopped mint, cilantro Warm Lime Dressing 1 cup each: snow peas, cooked crisp-tender, seeded chopped cucumber, tomato |

Method: Pour boiling water over noodles to cover in large bowl, let stand until noodles are separate and tender, about 10 minutes, drain. Cool. Toss greens and herbs with 1/2 Warm Lime Dressing and arrange on salad plates, top with rice noodles and vegetables and drizzle with remaining dressing. |
