Tabbouleh and Vegetable Salad Medley Recipe

Ingredients:

1 package tabbouleh wheat salad mix

1 cup cold water

1/3 cup each: finely chopped celery, sliced green onions

8 pitted prunes, chopped

1 tablespoon finely chopped fresh or 1 teaspoon dried basil leaves

1 clove garlic, minced

Lemon Cinnamon Vinaigrette

2 cups cauliflower florets

2/3 cup each: chopped red bell pepper, diagonally sliced carrots, halved cherry tomatoes

Cucumber-Sour Cream Dressing

Salt and pepper, to taste

1/4 cup crumbled feta cheese

Method:

Mix tabbouleh and cold water in medium bowl, let stand until water is absorbed, about 30 minutes. Toss with celery, green onions, prunes, basil, garlic and Lemon-Cinnamon Vinaigrette.

 

Combine cauliflower, bell pepper, carrots, and tomatoes in large bowl, spoon Cucumber-Sour Cream Dressing over and toss. Add tabbouleh salad and toss, season to taste with salt and pepper. Sprinkle with feta cheese.
