Sprouted Lentil Salad Recipe

Ingredients:

Sprouted Lentils (recipe below)

1 cup each: torn radicchio leaves, chopped tomato

1/2 cup each: chopped cucumber, yellow bell pepper

1/2 - 2/3 cup fat-free or reduced-fat mayonnaise

Salt and pepper, to taste

 

Sprouted Lentils:

Makes 2 cups

1/2 cup dried lentils

Water

Method:

Combine lentils, vegetables, and mayonnaise in bowl, season to taste with salt and pepper.

 

Sprouted Lentils:

Place lentils in quart jar, add water to cover lentils by 2 to 3 inches and soak overnight. Drain. Return drained lentils to jar and cover with cheesecloth. Let stand at room temperature until lentils have sprouted, about 2 days, rinsing lentils with cold water and draining 3 to 4 times a day.

 

Refrigerate sprouted lentils. Check sprouts daily, if they appear dry, rinse, drain and return to refrigerator.
