Oriental Noodle Salad Recipe

8 servings



2 packages rice noodles

2 cups each: halved snow peas, cooked crisp-tender, sliced red bell pepper

1 cup each: bean sprouts, sliced mushrooms, orange segments


5-Spice Salad Dressing:

1/3 cup orange juice

1 tablespoon olive oil

2 cloves garlic, minced

1/2 teaspoon five-spice powder

1/4 teaspoon each: salt, pepper


Pour boiling water over noodles to cover in large bowl, let stand until noodles separate and are tender, about 10 minutes, drain. Cool. Combine noodles and remaining ingredients in salad bowl and toss.


5-Spice Salad Dressing:

Mix all ingredients.
