Caesar Salad Recipe

4 servings

 

Ingredients:

4 thick slices French or Italian bread

1 clove garlic, halved

6 cups torn romaine lettuce

2 tablespoons each: lemon juice, no-cholesterol real egg product, grated Parmesan cheese

1 tablespoon olive oil

1/2 teaspoon Worcestershire sauce

2-3 anchovies, drained, chopped

1/8 teaspoon dry mustard

Dash red pepper sauce

Salt and freshly ground pepper, to taste

Method:

Rub both sides of bread slices with cut sides of garlic, mince remaining garlic and reserve. Cut bread into 1/2 to 3/4 inch cubes. Bake on jelly roll pan at 425 degrees until toasted, about 5 minutes.

 

Toss lettuce with minced garlic and combined remaining ingredients, except salt and pepper, in salad bowl, season to taste with salt and pepper. Add croutons and toss.
