Bean and Pasta Salad with White Bean Dressing Recipe

Pureed beans, fat-free sour cream, and seasonings combine to make a rich, delicious salad dressing - use on green salads too !

 

Ingredients:

4 ounces tri-color rotini, cooked, room temperature

1 can baby lima beans, rinsed, drained

1/2 can Great Northern beans, rinsed, drained

1/2 package frozen artichoke hearts, cooked, halved

2 cups cut green beans, cooked

1/4 cup each: sliced red bell pepper, pitted black olives

1/2 cup julienned reduced-fat brick cheese

White Bean Dressing

Method:

Combine all ingredients in bowl and toss.
