Yellow Salsa Rice Recipe6 servings
Ingredients: 1 can reduced-sodium vegetable broth 1/2 teaspoon ground turmeric 1 cup long-grain rice 1/4 cup prepared medium or hot salsa 1 medium tomato, chopped Salt and pepper, to taste Chopped cilantro, as garnish |

Method: Heat broth and turmeric to boiling in medium saucepan, stir in rice and salsa. Reduce heat and simmer, covered, until rice is tender and liquid absorbed, 20 to 25 minutes, stir in tomato during last 5 minutes. Season to taste with salt and pepper, sprinkle with cilantro. |
