Thai Fried Rice Recipe2 servings
Ingredients: 1 package frozen vegetable stir-fry blend with sugar snap peas 6 green onions, sliced 4 ounces pork tenderloin, finely chopped 1/2-1 teaspoon hot chili sesame oil 2 eggs, lightly beaten 1 package Thai coconut ginger rice, cooked, warm 2-3 tablespoons Thai peanut sauce 1-2 tablespoons reduced-sodium tamari soy sauce |

Method: Stir-fry frozen vegetables, green onions, and pork in sesame oil in large skillet until tender, 3 to 4 minutes, move vegetables to side of skillet. Add eggs, cook over medium heat until set, stirring occasionally, about 2 minutes. Break up eggs with spatula and mix with vegetables and pork, stir in rice and peanut and tamari sauces. |
