Sweet Bulgur Pilaf Recipe

4 servings



2/3 cup each: chopped onion, sliced green onions

1 large clove garlic, minced

1 cup bulgur

2 1/4 cups reduced-sodium vegetable broth

1/2 - 3/4 teaspoon ground cinnamon

2 cups cubed, peeled buttternut or acorn squash

1/4 cup each: currants or raisins, toasted pine nuts

Salt and pepper, to taste


Saute onion, green onions, garlic, and bulgur in lightly greased large saucepan until onions are tender, 5 to 6 minutes. Stir in broth and cinnamon and heat to boiling, reduce heat and simmer, covered, 10 minutes. Stir in squash and currants, simmer, covered, until squash is tender, about 15 minutes. Stir in pine nuts, season to taste with salt and pepper.
