Polenta Recipe

Ingredients:

3 cups water

3/4 cup yellow cornmeal

Salt and pepper, to taste

Method:

Heat water to boiling in large saucepan, gradually stir in cornmeal. Cook over medium to medium-low heat, stirring until polenta thickens enough to hold its shape but is still soft, 5 to 8 minutes.

 

Variations:

Blue Cheese Polenta

Make recipe above, stirring 1/2 cup crumbled blue cheese, or other blue veined cheese, into the cooked polenta.
