Microwave Risotto Recipe

Ingredients:

1 cup arborio rice

3 1/3 cups reduced-sodium fat-free chicken broth, divided

1/3 cup grated Parmesan cheese

Salt and pepper, to taste

Method:

Combine rice and 1/4 cup broth in 3-quart glass casserole. Microwave, uncovered, on high power 60 seconds, stir. Add remaining broth, microwave on high power, covered, until rice is al dente, 20 to 25 minutes, stirring every 10 minutes. Let stand 2 to 3 minutes, stir in cheese and season to taste with salt and pepper.
