Fried Lentils Recipe8 servings
Ingredients: 1 1/2 cups dried red lentils 1 cup chopped onion 1 teaspoon each: ground turmeric, crushed cumin seeds 1/4 teaspoon crushed red pepper 2 tablespoons olive oil 1/2 cup chopped cilantro Salt, to taste 2 teaspoons grated lemon zest |

Method: Cook lentils in 2 inches simmering water, covered, until very soft, 30 to 40 minutes, drain. Saute onion and seasonings in oil in large skillet until onion is tender, 5 to 8 minutes, reserve 1/4 cup mixture. Add lentils to skillet, cook over low heat, stirring frequently, until mixture is thickened, about 10 minutes. Stir in cilantro, season to taste with salt. Sprinkle with reserved 1/4 cup onion mixture and lemon zest. |
