Curried Couscous with Vegetables Recipe

Ingredients:

8 ounces fresh or thawed, frozen whole okra

1 medium onion, chopped

2 cloves garlic, chopped

1 cup each: whole kernel corn, sliced mushrooms, carrots

1 1/2 teaspoons curry powder

1 cup reduced-sodium vegetable broth

2/3 cup couscous

1 medium tomato, chopped

Salt and pepper, to taste

Condiments : chopped cucumber, peanuts, raisins, plain reduced-fat yogurt

Method:

Saute okra, onion, and garlic in lightly greased large saucepan until onion is tender, about 5 minutes. Stir in corn, mushrooms, carrots, curry powder, and broth, heat to boiling. Reduce heat and simmer, covered, until vegetables are tender, 8 to 10 minutes. Stir in couscous and tomato, remove from heat and let stand, covered, until couscous is tender and broth absorbed, about 5 minutes. Season to taste with salt and pepper. Serve with condiments.
